This year, why not try an easy recipe for the Christmas's Eve classic of „white cod“. You may serve this cod as a thick soup with chunks of soft fish, or choose to work the fish into a pate and serve as a starter. Make your choice and make sure to use this easy to follow recipe.

1 whole dried cod (stockfish), about 500 grams
600 g potatoes
½ garlic clove
bunch of parsley
Podravka dried bay leaves
Podravka black peppercorns
1 onion (100 grams)
150 ml olive oil
100 ml milk
salt

  • 1 Trim the dried cod by removing its tail and fins. Pound the fish with a mallet to expedite the soaking process. Soak dried cod in a container with lots of water (for a minimum of two days) replacing the soaking water several times a day.
  • 2 Transfer the soaked cod to a large saucepan and add water to cover the fish. Add sliced onions, whole peppercorns, garlic, bay leaf, and one spoon of Vegeta seasoning. Bring to boil and cook until you can remove the bones with ease. Leave in the cooking water until cool. Carefully remove the skin and bones from the fish.
  • 3 Cut the potatoes into cubes and add to the same cooking water.
  • 4 Combine the cooked cod and potatoes, adding some of the cooking water as necessary, mince and add 3 cloves of garlic and a bunch of chopped parsley, add the olive oil, and season with salt and pepper to taste. Stir to combine, cover the saucepan and shake it well.
  • 5 Finally add the milk and shake again to break down the potato and cod bits until the soup is nicely blended.

Advice

Use your fingers to remove bone and skin from the cooked cod. A small sharp knife is helpful to remove any dark spots to keep the fish and soup white. Make sure to wash your hands often as the fish will feel sticky.

Serving

Serve prepared cod as appetizer, hot or cold with toast.
